More and more people want to change their diet and limit consumption of animal products. Apart from meat and dairy products we often give up eggs in our diet

Unfortunately most desserts, especially cakes, contain eggs in their recipe. However, it turns out that there are several ways to replace them with vegan equivalents. Learn culinary tricks that will make you stop needing eggs when cooking

There are people who fear switching to a vegan diet on the grounds that they will miss out on familiar flavors. However, this belief can often be wrong, because the taste of, for example, eggs can easily be obtained with other ingredients. Here are 5 suggestions for replacing eggs in cakes and desserts

5 ways to replace eggs in your favorite baked goods

1. Ripe banana

A great way to exclude eggs from a recipe for delicious muffins, brownies or sweet breads is to use ripe bananas. Not only will they bind the batter together perfectly, but they will give the batter a sweet taste and moist texture. Half a banana equals one medium-sized egg. For a delicious sweet breakfast, you can make delicious banana pancakes in the morning

2. Flaxseed

Another very healthy substitute for eggs will be flaxseed. Just combine 2-3 tablespoons of ground seeds with a small amount of water and let it stand for a few minutes. When the concoction resembles a gel, it’s a sign that you can combine it with the rest of the ingredients. A huge plus will be that flaxseed gives baked goods a slightly nutty flavor, so it’s a fantastic addition to sweet desserts. You can use flaxseed in oatmeal cookies, sponge cakes, or even pancakes

3. Aquafaba

Aquafaba is a substance that is made when legumes, such as beans, lentils and peas, are cooked in water. It can be obtained by using marinade, which can be found in cans with cooked chickpeas. Aquafaba has properties very similar to those of chicken egg whites, so it is an excellent substitute for various dishes. You can add sugar to it and whip it into a stiff foam, so it will be a great ingredient for meringues or soufflés. In vegan confectioneries, the water after boiling the pods is also used to prepare icings and cake toppings. It is worth remembering that about 3 tablespoons of aquafaba equals one egg

4. Potato flour

It turns out that a good way to make a cake without eggs is to use potato flour. The flour will do the job of thickening the batter for the cake. However, keep in mind that when replacing the egg with flour, you should add a little more liquid to the whole thing – plant milk, water or fruit juice

5. Tofu

Another alternative to traditional eggs in our kitchen will be natural tofu. One fourth of a glass of tofu corresponds in weight to one egg. This product can be used in both salty and sweet dishes and will make your dish silky and fluffy. It is perfect for vegan cakes, which resemble cheesecake in taste.
