How to prepare mini croissants from ready made puff pastry?

Take the puff pastry out of the fridge to get it to room temperature – so that its sides will not crumble. Roll it out on the counter. Then with a sharp knife cut along the long side into two identical strips and start cutting out the dough, cutting it into long triangles

You can roll the dough slightly to make it easier to shape. Put your favorite jam on a small spooncherry or strawberry jam works great. Start rolling the rolls from the wider side. When rolled, bring the ends of the croissant together and tuck the thinner end underneath. Do not leave the thin end of the dough on top, because it will curl up during baking and will stick out. Place the rolls on a baking tray lined with baking paper. There must be some space between the rolls, because during baking they will grow a lot, so it is important that they do not stick together.

Brush the top with egg yolk and sprinkle with coarse sugar. Put them in the oven preheated to 200 degrees and bake for 18 minutes. The croissants come out soft, light and crumbly. They are delicious both immediately after baking and after they cool down.
