Pork neck is a signature dish at many barbecues. It tastes delicious because the neck meat is tender, crispy and juicy. The taste of barbecued pork neck depends largely on the spices used in the marinade and how long you marinate it for. Garlic is very important – it brings out all the aroma of the pork neck. The main secret of delicious pork neck is the length of its marinating. The rule is simple – the longer, the better. Then the neck of pork will acquire its full flavour and will soak up the spices. It is best to prepare the meat a day in advance so that it marinates overnight. Then the pork neck will be tender and crispy.
Cut the meat into 1 cm thick slices. Slightly break each slice on both sides and place them on a plate. Peel a few cloves of garlic and put them through a garlic press. If you don’t have a press, use a wide knife. Sprinkle each piece of meat with salt and your favorite barbecue mix. If you don’t have it, make your own or use our suggestion. In a small bowl combine salt, pepper, marjoram, ground cumin, ginger and smoked paprika. Rub the pork neck first with the garlic and then with the spice mixture. Place the pieces of meat in a bowl, one next to the other, and add oil so that it slightly covers the meat
You can also add ketchup, which will give the pork neck a real barbecue taste. Cover the meat with foil and refrigerate it overnight. We do not recommend marinating the pork neck for less than an hour as the meat will not develop the right flavour yet. You won’t get anything if the meat stays in the fridge for two days.
Remember – the longer, the better! When the pork neck is already marinated, heat up the electric grill and place the chops on it. Fry the meat for a few minutes until it is smoothly inserted with a fork. You can serve the fried pork neck with bread, potatoes, French fries or baked potatoes. Serve with your favourite sauces – ketchup, mustard, barbecue sauce, garlic sauce or tzatziki and necessarily with seasonal salad. A dish prepared this way is sure to be the hit of any gathering!
