For 1 cup of toffee sauce you need:
- 1 cup of fine sugar,
- 85 g of cold butter
- 1/2 cup sweet cream (30%)
- a pinch of salt.
If you prepare the above ingredients, you can proceed to action. Where to start? First, cut 85 g of butter into small cubes and set aside in the fridge. Then put 200 g of sugar in a saucepan (preferably a steel one with a thick bottom) and heat over medium heat until lightly browned. We can shake the saucepan from time to time, but do not stir the contents with a spoon, let the sugar dissolve on its own. Although culinary enthusiasts emphasize that there are two schools – some stir the melting sugar, and others do not
It is worth to be vigilant and constantly watch the vessel, because the dissolving sugar can be very easily burned (then you will feel a specific smell of bitterness in the air). Unfortunately, the sauce will not be salvageable. Remember that the longer the sugar boils, the darker the sauce will be. When the sugar caramelizes and turns a beautiful amber color, we can add the butter which we have cut earlier – stirring vigorously with a silicone spatula or a wooden spoon so that the fat combines well with the caramel
At first you will have the impression that the butter does not want to mix with the melted sugar, but after about 2 minutes the sauce will become homogeneous. What’s next The last step is to add 120 ml of cream – we must pour it very carefully into the hot mixture. Then simply stir until smooth and finally add a pinch of salt, which is the proverbial “dot over the i”
How long does the whole process of making caramel sauce take? About 10-15 minutes. You can also add cinnamon or vanilla to spice up the flavor
